Paris-Brest Praline & Caramelized almonds

A choux puff ring sliced in half, filled with a mousseline cream flavored with hazelnut praline and topped with a crispy crust of slivered almonds and powdered sugar. This traditional French pastry was invented in 1910 by pastry chef Louis Durand to celebrate the Paris-Brest bicycle, an old bicycle race between Paris and the city of Brest in Brittany.
